Being “fat” doesn’t always come with health risks, and there are levels of “fat” that would determine someone’s risk factors for their health.

Astronauts have to pass an extremely stringent set of health/physiological tests in order to be seen as fit to fly as an astronaut. If they have a clean bill of health regardless of some body fat, and/ or their body composition is deemed to pose no risks to their health, then they absolutely can go into space.
